I started with an ear of corn I'd previously parboiled and chilled. I do that in batches so there is always some ready to go in the fridge.



Begin by using a butter knife to smear a ridge of peanut butter down the corn. If you make it too wide you'll make a big mess out of your face when you eat it. You need just enough PB to keep the fruit in place while you consume your sandwich.



Add fresh fruit, whatever is in season. Cherries are my favorite, partly because a cherry half or two is the ideal bite.



After you've eaten that row do it again.



Repeat until you run out of corn, fruit, or hunger.
